How many of you love drinking soups? I absolutely adore them, especially in the winter. Well, as some of you may know, I’ve been following a raw food diet for a few years now. What’s that? It means eating uncooked food – so lots of fresh vegetables, fruits, nuts, and avocados. 90% of my diet consists of raw food and the rest consists of quinoa, sweet potatoes, brown rice, so forth.
Anyway, I’m not here to speak about my diet. What I wanted to share with you is this delicious soup recipe that I just made. What’s best about it is that it’s 100% RAW – meaning you can drink it even in the hot summer months. It doesn’t taste bad cold either.
This soup is called “Mycology Cream of Shiitake Soup” by raw foodist extraordinaire Matt Amsden. This guy is a genius when it comes to preparing tasty raw dishes. He makes his recipes very interesting and delicious that junk food lovers won’t spit out his stuff.
Here’s the recipe:
Serves 2 to 3
A thick blend of shiitake mushrooms and fresh vegetables creamed with almond milk.
- 3 cups almond milk (see note)
- 2 cups shiitake mushroom caps, plus a few for garnish
- 3 stalks celery
- 4 cloves of garlic, peeled
- 1/3 cup fresh lemon juice
- 1/4 cup olive oil
- 1 1/2 teaspoons sea salt
